I will not pretend to be neutral about Hyderabadi food. The biryani alone is worth the flight, but the city has a whole rhythm around chai, kebabs, and sweets that most quick guides skip right over.
The biryani, obviously
Hyderabadi dum biryani — slow-cooked with the meat and rice sealed together — is a completely different animal from the north-Indian version. Paradise is the famous name; locals will also point you to Bawarchi or Shah Ghouse. Order it with mirchi ka salan and a bowl of raita to cool things down.
Chai, kebabs, and haleem
For a proper old-city moment, get Irani chai and crumbly Osmania biscuits at a spot like Nimrah right by the Charminar. If you happen to visit during Ramzan, haleem — a rich meat-and-wheat stew — is everywhere and absolutely unmissable.
Sweets + the honest warning
Finish with double ka meetha (Hyderabad's bread pudding) or qubani ka meetha (stewed apricots with cream). Spice here runs medium-to-high, more than Mumbai or Delhi — keep the raita close and don't try to be a hero. As always, if a spot has shut down, drop a comment and I'll update it.
